This Chinese cinnamon, sourced from the Guangxi Autonomous Region, is fresh and relatively soft, making it easy to break by hand into smaller pieces. Each batch consists of rolled quills approximately 4 inches in length, totaling 2.5 ounces (71 grams) in weight.
Used whole in braises and soup stocks or ground for Chinese five spice blends, cassia bark pairs well with star anise, Sichuan pepper, fennel, and clove. It is also a key ingredient in Sichuan hotpot and dry pot spice mixes.
